Penne ziti rigate with kale, sweet potato and pecans

Ingredients:
  • 320g penne ziti rigate
  • 1 diced sweet potato
  • 100g chopped kale
  • 30g roasted pecans
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste
Preparation:
  • Roast the sweet potato with oil and pepper in the oven at 200°C for 20 minutes.
  • Sauté the kale in a pan with a drizzle of oil.
  • Cook the pasta and mix with kale, sweet potato and pecans.
