Spaghetti with crispy vegetables and peanut sauce
Inspired by Asian cold noodles, this recipe is packed with protein and flavour.

Ingredients:
  • 320g spaghetti
  • 1 julienne-cut carrot
  • 1 cucumber cut into thin strips
  • 1 julienne-cut red pepper
  • 2 tablespoons of natural peanut butter
  • 1 tablespoon soy sauce
  • Juice of ½ lime
  • 1 tablespoon sesame oil
  • Sesame seeds and spring onion for garnish
Preparation:
  • Cook the spaghetti, drain them and cool them under cold water.
  • Mix peanut butter, soy sauce, lime and sesame oil to make the sauce.
  • Season the pasta with the sauce and add the crispy vegetables.
